This is a recipe for chile base sauce. It can be used for chile con carne, tamales, and other protein stewed recipes. In this case, I used it for tamales.
Supplies:
1 bag of each - dried chile pasilla, chile guajillo, and chile pupa
2 cups of chile water
1 2/3 cups of chicken stock or bouillon
1 1/2 teaspoons of Salt and Pepper
1 teaspoon dried oregano
3 garlic cloves
1/2 teaspoon of garlic powder
1/2 a bay leaf
A good blender
Strainer
1. First cut stems off of chiles and seeds. I use kitchen shears.
2. In a pot, boil chiles with water until completely soft and reserve 2 cups of chile water.
3. Add all other ingredients into a good blender, blend smooth and strain chile base sauce until no chile pieces are in sauce. Add to stewed meat and set to boil.
