Aww, Comfort Food! I made this in less than 30 mins. After, I served it alongside some garlic toast.
5 peeled, diced potatoes
1/2 c diced onion
1/2 c baby carrots diced
1 c of broccoli florets
1 c of Jack Cheese
6 c of chicken stock
2 c of milk
1/2 c of flour
2/3 c of heavy whipping creme (optional)
2 TBSP of oil
1. Heat Pot, add oil and Sautee all veggies, except florets for 3-5mins, until onion softens.
2. Add flour slowly and mix. Then slowly add chicken stock and give a nice stir.
3. Then add, milk and wait to soup to thicken. Simmer, so soup thicken and all veggies are cooked properly. Turn off soup, add cheese, til it melts. Then, finally add cream.
4. Serve alongside garlic toast or croutons.
