FoodQT : Chayote Squash and Corn


Here's a dish I loved when I was a kid. It's traditionally with zucchini and tomato. I found some lovely Chayote Squash and made with that instead. Such a great way to incorporate veggies in your day.

Supplies :

4 Chayote Squash cut in half and steam with 1in water for 10 minutes. You want to make sure you don't oversteam, you want the chayote to have some bite. Diced into small pieces.
1/4c finely minced onion
1/2-1c of sweet corn
Salt and Pepper
Butter

This recipe is super easy to make.
1. Add some butter to a pan on medium heat. Make sure the pan has heated up and toss onion, to sweat them out.
2. Once, onion is ready, add chayote, you may need to add more butter. Sautee in butter for 2-3 minutes, until tender. Keep moving them around in pan.
3. Add corn, salt and pepper to taste.
