FOODQT: Potato and Egg Salad

As summer night approach, my hubby wanted a potato and egg salad. So I used the stovetop and pressure cooker to get it done. In less than 15 mins, I had both potatoes and eggs perfectly boiled.

Supplies : 
6-7 large potatoes, 3 with skin and 4 peeled 
3 strips of crispy bacon
2 tablespoons of chives
1/2 c of mayo, I use faux mayo
2/3 c sour cream
Salt and Pepper to taste
1 tsp of paprika
1 tsp of Frank's Red Hot Sauce

1. Boil Eggs and Steam Potatoes, cut into small pieces and place in bowl.

2. Mix Frank's Red Hot with Sour Cream. Add Paprika to potatoes. set aside.

3.  Chop bacon into piece and place in bowl.  ADD mayo and sour cream, and then add chives.

4. Add eggs, salt and pepper, and gently fold together, not to disrupt potatoes and egg. 

5. ENJOY! 😊
