FoodQT: Ceviche


After weeks of asking, I finally had the chance of making ceviche. It was real hard to squeeze in 20 minutes. With baby in tow, I minced the shrimp, the veggies, squeezed limes and seasoned aggressively. Now, this is what's for dinner.

Supplies:
1 lb. of shrimp, deveined, cleaned, minced.
1/2 lb. of ground fish
1/2 lb. crab shredded
2 round tomatoes, finely chopped
1/2 red onion minced
1 cucumber seeded and minced
dried oregano
Small handful of cliantro, minced finely
salt and pepper
16 limes squeezed
A large bowl
plastic wrap

Mix all ingredients together, toss lime juice in and mix well. Season to taste. Cover and let marinate for 8 hours or overnight.
