FoodQT: Potato Cheese Panko Balls


Tonight I made these appetizers for dinner. These are excellent snacks for kids, my kiddies have requested them for awhile. The recipe is easy and super fast to do.

Supplies:
Baked Potatoes - smashed and skinned
Salt and Pepper to taste
1/2in. Cubes of cheese
1/2 tsp of cayenne, paprika, garlic powder
Panko breadcrumbs
Original Breadcrumbs
3 eggs, 2 whisked in a bowl
2 shallow bowls
oil for Frying

1. Mashed spices into potatoes and mix in 1 egg. Form, into 1inch balls. Stick cheese in middle.

2. Dredge into egg mix and cover in breadcrumbs.

3. Dredge into egg mix, then into Panko breadcrumbs. Mold and shape into balls.

4. Make sure you have 1 inch of oil in pot. Turn to medium high heat. Fry until golden brown. Lay on paper towel, until ready to be served. Best served hot.
