FoodQT: Slowcooker Chicken Fajitas


Since, starting a new diet as part of the gestational diabetes, I've have included more veggies in our family diet. Slowcooker fajitas are do easy to make, the flavor is amazing and are very versatile for different meals.

I used our fajitas meal for tostada mix. With leftovers, I used for making, tacos, burritos, and machaca breakfast meals.

Supplies:
2-3 lbs of chicken breast
4-5 bell peppers in different colors
2 TBSP of garlic powder or minced garlic (I used a tbsp of each)
1 onion sliced
1 tomato cut in quarters
1 TbSp of paprika
1/2 c of tomato paste or tomato sauce
1/2 tsp of salt
1 tsp of pepper
2 jalapeno slices (no seeds)
1/2 tsp of oregano
2 cups of chicken stock

Mix together and add to slowcooker. Set to high for 1 hr. Then low after. In 2 hours you have delicious and juicy fajitas ready for your meals.
