FoodQT: Albondigas Soup


I was feeling under the weather and being pregnant, there very limited amount of medicine you can take. So, I turn to food to help combat this cold. Normally, I would make caldo or a chicken noodle soup, but I had no chicken on hand. I found some ground beef, perfect, let's make Albondigas soup.

Albondigas soup, is a Mexican traditional soup made with a mixture of ground beef and rice meatballs and lots of veggies.  It's very simple to make and always delicious.

Supplies:
Lean ground beef
1 egg (lightly beaten)
1/3 cup of rice
Minced garlic
Salt and Pepper
Chicken Stock
Tomato Paste
1/3 cup of tomato sauce
Cliantro
Corn (cut into small circles)
Potatoes


1. Start by making meatballs. Mix your spices, rice, egg, and meat together. Forming 1-1 1/2 in. balls.

2.  In stock pot bring stock to a boil, (a little less than half the pot of water and stock)


3. Add paste and tomato sauce (1/2 can), then let simmer for 5 minutes. Slowly add, meatballs and cocer. Let cook for 15 mins.

4.  Add veggies, and cover again. Let cook for 15 minutes on reduced heat. Then, add sprigs of cliantro on top to give it flavor.

5. Serve with mexican rice.
