FoodQT: Pad Thai+ Spring Rolls

Who put the PAD, in the Thai noodles? 

Hi Foodies! Tonight menu is exploding with exotic flavors!

On Menu: Pad Thai Noodles with Spicy Chicken and Beef served with a side of egg rolls. Sounds like a lot, but not as hard as it sounds. The total cost of this meal for a serving of 6 people is $25. Wow, can you believe that?

How the 'PAD' fit into the noodles? "Pad Thai" comes from Phat Thai, which mean "fried thai style," in Thai.  It's a stir-fry of vegetables, meat, noodles, and chili.

Supply List of Ingredients:
1/2 lb beef sliced into strips thin  (top round, or a thin beef)
1-2 full pieces of boneless chicken breast (cubed)
1 stock of green onions (chopped)
1 whole package of oriental style noodles ( I used chow mein, there was 24oz. but I used half,  it was in my pantry already, for thai, use rice noodles)
1 carrot (grated)
1/2 lb. bean sprouts
1 scrambled egg (optional)
1/2 stock of celery (chopped, optional)
1 head of cabbage (divided into 2 parts)
1 teaspoon minced ginger
2 TBS of fish sauce (divided)
2 TBS of oyster sauce (divided)
1 clove of  minced garlic
2- 2 1/2 TBS of Soy Sauce (reduced sodium if possible)
1 package of spring rolls pancakes
1 TBS of Chili Paste
1 teaspoon of Sweet and Sour Sauce
White Rice to serve on the side
3-4 TBS of Vegetable Oil (divided)
salt to taste (fish sauce, soy sauce, oyster sauce has salt already, I didn't have to use salt)
1 TBS of peanuts (optional)

Prep Time: 5-10mins, Cook Time: 20 minutes all together

1. For this you're going to need a Wok (Ikea $5) and 2 bowls.  Heat 1 TBS of oil. Cook Chicken, drain, set aside. Heat another Tablespoon of oil, Cook beef until nice and crispy, set aside.

2. In a shallow bowl, Mix 1 tablespoon of oil, garlic, TBS of: soy sauce, chili paste, oyster sauce,sweet and sour sauce, and fish sauce. Whisk together, set aside.

3.  In a pot, boil 6 cups of water, once water is boiling turn off stove top and add noodles for 2-3 mins. Drain set aside.

4. In Wok, heat remaining oil  and add bean sprouts. (They take longest to cook, through, 2 mins. tops) then add cabbage and stir-fry (add scrambled egg into mixture at this point) Add chicken and meat and stir-fry all together with thai sauce mixture, sauteed 1-2 mins.

5. For egg rolls, sauteed remaining veggies, carrots, celery (or any other veggies you'd like) add fish sauce, oyster sauce and a little bit of soy sauce and water. Sauteed veggies, then let cool.

6. Square pancakes are much easier to roll, start with bottom left side corner, add 1-2 TBS of veggies fold corner to middle. Fold Top Left corner to middle. Fold bottom right corner. At the end of this your roll should look like a small envelope pocket. Roll Top Right corner, to seal wet tip with a little water. Deep Fry for 30seconds- 1 minute. Put on paper towel.

7. Plate! Served food together on top of rice mound, with your side of sweet and sour sauce and some hot mustard. Garnish with green onions and peanuts. Enjoy!
